IT in and of itself is not boring...fixing the never-ending deluge of problems is what gets boring. Spend enough time as a programmer/developer/DBA/whatever in a corporate environment, where you (essentially) earn yourself a demotion to the level of "Corporate IT Whipping Post" and you'll understand why students view the world of IT as boring.

The problem is that the common conception of IT is just that: seen as a thankless corporate 8-5 job with little to no appreciation from the people you are basically there to solve problems for. Thinking creatively about a difficult problem that hasn't been solved yet is fun; digging through existing infrastructure to find the one thing going wrong that was working fine yesterday is not. I'm sure working in R&D somewhere, or on some extremely high-level projects would make our jobs more interesting instantly.

Until that time, though, we are stuck "fixing" problems like buttons not being the right size, some yokel kicking out the network cable from the back of their computer, and any of the millions of other mundane problems that we all run into on a daily basis.
