Privacy vs fraud prevention
If you don't time stamp events, including votes, how will you ever be able to determine if fraud occurs. That audit trail and the details are designed to be able to prove if there was fraud. Just deleting the time stamp would remove that check and make fraud that much more difficult to prove. The key is limiting access to the audit trail and strong penalties for violating that access.
