It only seems simple
6:00 PM is not 6:00 PM in another timezone. I like all my appointments being in my timezone, no matter what part of the world they might have originated. But for that to happen, they need to be stored in GMT on the server, and Outlook has to do conversions. Most apps do use the system time, but not all.
