The reason why we can't use a cell phone while in a gas/petrol station is that there is a risk of generating a spark by the cell phone signal that could ignite the gas tank.

This is exactly the same reason why we can't use a cell phone in flight. Just imagine hundred of passengers in a plane using their cell phone at the same time, the combined radio signal is considerably stronger then a few customers in a gas station and hence the risk of igniting the aircraft fuel tank is very real indeed.

It is much less terrifying to tell passengers that their cell phones could interfere with the onboard electronics then to tell them that the plane may explode due to the use of cell phones.
