I could be wrong

I heard that the platform choice at Pixar was determined more by
personal preference of the artists involved. I'm sure they have
render farms but I don't think the decision is necessarily operating
system bound or hardware bound. I'm sure they use a lot of custom
software. In the past high end animation was run on Unix systems
like Sun and SGI, much of which moved to Intel but also on to OSX
on 64 bit Mac hardware.
