That depends
I agree that most mid to large companies would buy a service contract but smaller companies would probably just down load a copy and install it where they need it. There's lots of support for the various distro's out there at places like linuxquestions.org so if you don't want to shell out the bucks of the support contract and aren't afraid of a little tweaking it's feasible to go it on your own. I know we do here, we're running over 70 linux servers spread out all over the US and Canada with out the need for a support contract.
