several things help
the reason it remains stable is at the space end will be a counter weight, imagine you spinning a ball on a string around your head. the string stays tight. once the elevators climb about half way( or where ever gravity isnt as strong as the spin ) the centrifical force will throw them up the cable. it will take about 2-3 days to go one way up or down the cable.
