It seems to me most businesses do not want their documents stored on a server in some other city for both hacker concerns and disaster concerns.
Although I must admit I havn't used google apps so I don't know if the documents are sucsceptible to hackers or not -- I don't know if they are stored encrypted, or if they use SSL layer during transmission (encryption.) Or if such encryption is able to be cracked.
Nor do I know if google has mirrors of data on servers in different geographic locations - which can solve the disaster concern. (A large earthquake at one data center, but another data centers a few US States away still online and mirrored.)
At any rate, we are seeing some movement back to the dumb terminal / mainframe server model of computing, which is how it was before Microsoft's and Apple's personal computers came into prominence. In the form of such "software as a service" as google apps, and Microsoft's SharePoint Services (available by monthly subscription from many web hosts as well as microsoft themselves,) although SharePoint Services is not an application, it is a repository / portal that works with Office. You can pay web hosts to be able to login to a windows server with terminal services or remote desktop and use Office, and the cost is probably comparable to google business (most people aren't aware of this.) But if we are moving back to a dumb terminal - mainframe server model, I think the largest opportunity is to sell open source (linux) "terminals" that combine open source desktop applications and integration with online software as a service applications like google docs or sharepoint services.
