Linux version on the way
It would seem a little silly for them not to roll out a Linux version, as they mentioned in a recent Wired article that they used a bit of Ubuntu code. From Joost's FAQ:

Does Joost? work on the Mac or Linux?

We've seeded an initial version of the native Macintosh Intel version to 250 testers. Depending on the feedback we expect it to be available in the beta programme very soon. Currently the application works fine under Bootcamp but not under Parallels; it needs to access the graphics processing unit (GPU) for some of its operations, and Parallels does not support that at the moment.

A Linux version is also in the works.
