"...say we are at a bank, and it gets robbed. You see a man with a red hat, I see a figure with red hair, and the next guy sees only the gun. Which is truth?"

The truth is there, despite our (possibly different) perceptions of it.

I, for one, am a firm believer that there is an objective truth out there, even though our perceptions are easily fooled and mistaken.

Just because our perceptions are somewhat subjective doesn't mean the world is also, or that we should stop trying to find out what the truth really is.

And as others have pointed out - definitions matter. Water is wet because we define the property of "wetness," and water fits that definition.

"We view the world through the framework of our beliefs, and that colors everything we see."

Agree. But that's only because our perceptions are somewhat flawed and subject to one point of view.

"Like Asheigh Brilliant said, 'Seeing is believing - if I hadn't believed it, I wouldn't have seen it.'"

Disagree. I can't magically make my computer disappear just by not believing it's there. Believing gravity doesn't exist won't allow you to ignore it and fly. You can believe as strongly as you want - you can even be a certifiable nut and have mental problems that prevent you from believing in gravity - but that won't make gravity go away.

Just because perceptions can be subjective doesn't make the world subjective.
