With MythTV, all you need is a $99 video card, bada-bing. All the digital video you could want.
Not sure of your comfort level with Linux, but I (ubergeek that I am) recently built a Gentoo box at home, and the thing absolutely screams (on P3 1Ghz with 384Mb ram). If you're looking for something a little less complicated to set up, I've heard Suse9.3 is all that and a bowl of grits.
