Duh. Ever wondered how Proxy cache servers work?
That is all Google is doing except, sinc ethey already have the servers with such capabilities, you are using their servers as a proxy cache server.

THey cannot do that without getting info on your surfing habits. Of course their privacy statements says that they capture this data (since it is needed to do proxy caching anyway as with all proxy cache servers) and if they left that out of the privacy statement you would have said that they were not being honest.

They also said that they won't use it for anything else because they do not need it for anything else. THey never have to give out that info to make money serving ads. They do not even need to index your surfing habits. THe ads are placed in real time depending on the site you are visiting (even if it is ciontrary to your regular surfing habits) and therefore not necessary for ad serving.

Did you read the FAQ's or the white paper or the full terms of use agreement or the full privacy policy document or anything?

With aggregate data they are able to market by saying. "x number of people surf to sites related to y each day and we can target all of them for you and your product z if you pay us this much. I'm writing down a figure that I'm sure you'll find mor ethan reasonable."

{A small note is passed gently accross the wooden table. It is barely visible under his hand as he slips it past the half burned candle that dimmly lights the area.}
