To each their own, but I think you are missing out..
Personally my favorite theme park on Earth is Universal Studios in Florida...I'm going there for the 3rd time this November.

I do agree lines really suck, especially if you go when most folks go which is June-August.

However if you go later in the season, usually its much more a pleasant experience -- FAR less folks (much shorter lines) and in the case of Florida you are standing in only 70-75 degree weather instead of 90 PLUS degree weather.

There are some disadvantages going after the normal season:

-shorter park hours
-some attractions may be closed (usually this is your water park attractions)

All in all I think you are missing out on some really fun moments to share with your child.

Bottomline: Live a little, spend a little, we only live once!
