Airliners normally use a flux valve, a magnetic sensor mounted out in the wing (to be away from other electrical systems). This sends data to the heading system. But it is really just used to initialize the inertial reference system (IRS). Most modern IRSs are updated with GPS data, including aircraft track once moving.

The cell phone in the airplane problem is hitting multiple cells on the ground. And there is one company now making a device for the airplane that allows you to use your cell phone. This device acts as the cell tower, then talks to it's own ground stations to relay your call.
