I think you're right and wrong
Apple certainly is an innovator. I don't think they're THE innovator. Other companies are doing some pretty innovative stuff without Apple's direction or input. I have to give lots of props to some of Apple's innovative ideas, like the iPod and OS X.

But other things were less "innovative" and more "jumped ahead of the pack because they have a captive audience". Get rid of the floppy? Not innovative, inevitable. Apple just got there first. Flat panel displays? Again, most people knew it was coming, it was just a matter of price. Most Mac people don't mind paying a little more, so Apple could do it first. Keynote? There were other presentation packages before Keynote, there will be others after. Different color cases? Sure, the iMac was the first in the mainstream, but case modders had been doing different cases for years before Apple "thought" of the idea. The general community was introduced to the idea by Apple, but they didn't invent it.

If Apple weren't around to "innovate", other people would take their place. That's sorta the nature of capitalism. Heck, even their most innovative product in years, the iPod, was actually created a couple of years before. I'm pretty sure Creative's NOMAD line had a large hard drive based MP3 player a couple of years before the iPod. Certainly it wasn't any where NEAR as elegant, sleek, stylish, or usable, but it existed as a concept.
