This has already been done...
I know for a fact the MPx200 running Windows Mobile 2002 lets you listedn to music. It has an SD card slot for up to a Gb of storage. Granted, it doesn't match the size of an iPod, but You can still listen to a sizable amount of music on your phone through a headjack.

I'm certain other non-MS OS based phones could have similar features.
