This is not a new idea.
Nokia has the N800. With a high resolution touchscreen (800x420), WiFi, and bluetooth, running a custom version of Debian Linux. Nokia sponsors an open source project called Maemo which is a great group of devs who have ported many FOSS apps to the N800. Including Mplayer, Gaim, Gnumeric etc...
It's not a phone but is VOIP capable. Skype will have a version for the N800 within a couple of months. It supports a 3/4 screen keyboard to aid in text entry and has an integrated webcam.
