Try this sometime: set it to play one long playlist, or everything on it, and just let it play. See if that gets you closer to the 8 hours. I'm sure Apple uses their best case scenario for listing battery life.
There are a number of things that affect your battery life and some are significant. Changing playlists, accessing calendars, playing games, i.e. anything that is causing the hard drive to do a lot of seeks will use more power.
