I've actually never had the opportunity to talk to someone who honestly believes Linux to be 100% bullet-proof. To such an individual, I would say "linux single" and watch his insanity grope for some kind of answer. Eventually, even he would admit that with physical access, there's no such thing as security.

The question of whether the security in the Linux and/or UNIX world is of superior quality than in the Windows world is a different question altogether. In my experience, I would say yes. But I would also say it's ultimately determined by the quality of your administrator. A complete idiot can turn a hardened Linux box into an open gateway for crackers, spammers, and all sorts of malicious types. And a sufficiently skilled Windows admin can keep a Windows box locked down pretty darn well.
