For all intents and purposes, it behaves exactly like a single
core chip.

Because then you have lots of boxes to maintain, not just
one. You can build a single server with redundant power,
hot-swap RAID disks, etc. and manage it in a single box. If
you prefer lots of independent boxes, fine, that's your
choice. But eight separate boxes have more chance of a
failure, consume more power, generate more heat, make
less efficient use of resources and take up more space
(maybe) than one eight-way box.

Of course, you may want the flexibility of many boxes,
again, your choice. Horses for courses. But just because
that suits you doesn't mean everyone should do it your way.

What about boxes designed to download their OS from a
server? What about dual processor versus dual core versus
two independent boxes?

Software companies can price their wares however they like.
If they are too expensive, then (provided there is healthy
competition) I'll go elsewhere.

There isn't a single multi-core box around that runs
Windows in native mode. MS have pre-empted the market
by 12 months - this is actually a hollow claim, MS don't have
to settle their multi-core pricing yet because no one can run
Windows on a multi-core box yet.
