People who can recompile a kernel are more knowledgeable than the average user.
People who want control over "EVERY bite" are looking forward to all the time they can spend with their bytes.

Most individual users do not want that control.
Most companies would not mind a situation in which their fairly standard IT needs are met by standard software with quick tweaks. When someone talks about recompiling a kernel, they are more likely to reject the software than become interested in it.

I think you're looking at one rarefied segment of the software market. You shouldn't generalise from that segment to the rest of the world.
