Loopholes

I worked for a very large corporation some years ago, where many a patent was held, but the majority of those where for processes that allowed the company to do things other companies could not.

Some allowed for the manufacture of products that competitors where not capable of reproducing, others allowing the company to produce the same quality product at a lesser cost. These are trade secrets that if allowed to be copied by their competitors, their advantage would be lost in the market place, at a considerable cost to the company in R & D.

Unfortuneatly, software patenters use the word "process" as a loophole to patent something just as you had described above as an example:

a process in which the use a wireless network to transmit electronic mail...

I view the first process as a legitimate and patentable process, the second a "play on words" if you would, as I do not consider that "a process"
