Your product is the game, not the software
You wrote:
Lets say I wrote Massively Multiplayer Role Playing Game like ever quest and licensed it under the GPL. I want you to use and I don't care if you pay for it as my revenue comes from you paying me to use my services to play the game online. By being open source players could tweak the software maybe even adding valuable innvoation that I could implement on the service. This gives me a feel at what the players want. See how that works?

The software is only a means to get the players using "my" product, the game.

Because the server works with the software as I know it to exist, it would complicate my life to let the players change the software as they chose. On the other hand, I could let players see code to improve it, so long as I could be sure that I was in full control of what was actually implemented.

See, we're not talking about software and services here, we're talking about software as an indispensable part, the delivery system of the product I'm actually selling.
