I'll address each one in order:

Q)What I've always wondered is how they manage what must sometimes be a flood of such reports.

A) The program submits a stack trace, which is a well formed output of the data/machine as it crashes. This can easily be parsed and compared to existing stack traces by machine.

Q)How do we know they don't just go into the bit bucket once they are used to glean information about users' and the computers they're using?

A) Look at the source, ubuntu can't afford the bad press to send back personal information anyway, being able to look at the source code means you can check.
