It sounds like you haven't checked up on Apple...
It sounds like you haven't checked up on Apple in quite a while. While it's always been difficult to upgrade the all-in-one Macs (iMacs, mac mini, eMacs, etc.) the tower Macs have been just like any PC. You can upgrade/replace the CPU, RAM, video card, add HDDs, RAID them, etc. The drawback is, of course, that motherboards are very model specific. Apple doesn't follow ATX standards for their computers, so you're correct in the sense that you generally don't upgrade the motherboard with Macintosh. However, upgrade limitations are true for any non-ATX computer be it from Dell, Gateway, HP, or Apple.

In the tower Macs (PowerMac G4, G5, and Mac Pros) you can add additional HDDs and RAID all you want. Actually, in the Mac Pros, it's even easier since the HDDs are now all located in easily removeable HDD sleds. Just pop them in, format, and RAID.

With Apple's swtich to Intel, you can even upgrade the all-in-one Macs now.

I agree 100% that PCs do offer a wider selection, easier, and cheaper customization compared to Apple's offerings, but to say that you're stuck with whatever Macintosh you've purchased is wrong.
