Theory in its proper sense has nothing to do with the Platonic ideal. It is about putting what we do in software on a solid mathematical basis.

I wonder how many people would be prepared to fly in an aircraft where the designer had not knowledge of physics or aeronautics but had just started from paper aeroplanes and moved on by trial and error?

Implementing the theory properly has substantial benefits in terms of productivity, accuracy and efficiency.

Are you suggesting that we should just accept what the suppliers serve up to us without criticism? I don't want particularly want to be a dumb consumer, I want to be able to make an informed choice.

Yes, we have to make the best of what we have now, but understanding the theory is also a great help in developing workarounds for the deficiencies of current products.
