Heck, never mind individual applications....
KDE and GNOME both allow you to "print to PDF", no matter what application you are using. And there are many open source projects for "print to PDF" drivers for Windows [url=http://sourceforge.net/project/showfiles.php?group_id=126790](here's one)[/url].
