Just guessing.
A touch screen is nothing more than a serial mouse. So I belive FreeX86 should have drivers that handle touch screens.

For C++, you can use Qt (base of KDE, VERY nice and cross platform) and I think you can use touch screen with their embedded line (can someone varify this?).

Java... well, nothing to say. But aren't there Java POS terminals with touch screens being sold? Maybe not at that time.

As for VB and rapid development... I am at a loss too.

If it was me, I probably would have gone the same route as you did.
