From purely software oriented point of view the business model would be to make a product worth purchasing. This could use open source software and providing services for a price or it could closed source offering free service but charging a fee for the product.

But from any other business point of view Open Source is more profitable as it is quicker to use code already in existence than to write it from scratch or to purchase 3rd party proprietary software and pay for customizations. That means the business can get down to doing business more efficiently with reduced costs.

Now this doesn't compare to off the shelf software that suits you needs be that open source software or proprietary software. In this situation you go with works best balanced by the best price.
