Customizable Today & Home Screen
Actually, the Today & Home screens are more customizable than most people think. To move an icon, all you do is press and hold on that icon until a white "halo" effect shows up around it. Then you simply drag it to its new location.

Additionally, you can use either Wallpapers or Themes to change the look and feel of you Windows Phone device. For instance, some use a 3 icon per row today screen, while others have gone to either a 4 or 7 icon per row today screen. I personally prefer 3, because its more finger friendly. You can also control the font size as well.

There's also some free 3rd party customization programs that give you further functionality, like cHome and reStart.

Finally, with the Titanium interface, you can change the order that things appear and add other Titanium widgets as desired.
