It's not that simple
When do most people have their security updates installed? At 3 AM, the default setting for Windows, and it's that way because most people are not using the computer at that time. But the computer needs to be on for that to happen.

Also many people, myself included, have a need to remote into their work and/or home computers. You can't do that after a cold shutdown.

And there are a plethora of background services that need to be run, and run best when the computer is not actively being used. AV scans, backups, defrags, etc.
