depends on the application
i have several raid setups on my home lan, the latest one being a dedicated win2003 server w/ highpoint 2320 rocketraid card. the card doesn't have a dedicated processor for the raid 5 calculations, BUT storing is the only thing that box does. and it does it quickly and effectively. i see lots of processor usage when transferring information back and forth from the now 2.5 terabyte array (expandable to 10+), but since i'm not ALSO trying to watch a movie or play a game on the box there's no actual impact from that usage.

i would NOT go software raid on a desktop that i also intend to actually work from. i.e. having a big raid 5 for storage on the same box that you use for video editing isn't smart, the two seperate are great, but together will cause slowdowns.
