As they have it now it comes down to 2 for most of us
Pro or home. And now home is a subset of pro so the difference is clear. Plus you can upgrade LOCALLY to a higher version straight off the installation media. This is a real plus. Overall it's much simpler and sensible.

Unless you are an enterprise customer or not in developed world that will be the choice.

Starter will be an option on cheap netbooks only and probably not one many will choose. You can't even buy starter unless on an OEM machine.

I suppose they should have just done away with Ultimate but for my money pro will be the obvious choice.

Unfortunately nothing can be done about the 32/64 schism until 64 takes over.

They could just offer 1 but then we loose choice and end up paying for stuff we don't need.
