Can you say "Terminal Services"?
Think of a plumber, or anybody who comes to your house or business working off of a printed work order. They get their work order, make changes to the order if necessary, mark it complete, trigger a billing (if necessary), maybe even enter in the customer's credit card and e-mail them a receipt, all in one shot without having to go back to the office and spend a half an hour keying this stuff into a computer. They could even keep a portable printer in their truck for printed receipts.

These devices would be perfect for this kind of ultra-mobile, single application use. The question is how open the hardware and software are to allow such things.
