Ubuntu System Requirements can be quite lean
For Ubuntu (and Kubuntu) from the page at

"Ubuntu is available for PC, 64-Bit and Mac architectures. At least 256 MB of RAM is required to run the desktop install CD. Install requires at least 4 GB of disk space."

But there is also a Ubuntu flavor, Xubuntu, that's assembled to install and run with considerably leaner resources than Ubuntu and Kubuntu. It does this by, among other things, using the Xfce window manager and a leaner desktop suite (neither GNOME nor KDE, although of course you can install and run any GNOMEish or KDEish programs with Xubuntu's package manager and all [and only] the necessary additional GNOME/KDE bits will come in as well). From the "system requirements" link in the page at

"To run the Desktop CD (LiveCD + Install CD), you need 128 MB RAM to run or 192 MB RAM to install. The Alternate Install CD only requires you to have 64 MB RAM.

"To install Xubuntu, you need 1.5 GB of free space on your hard disk.

"Once installed, Xubuntu can run with 64 MB RAM, but it is strongly recommended to have at least 128 MB RAM."

My main home computer runs Kubuntu with a 500-MHz Pentium III and 256 MB of RAM. Another box runs Xubuntu with 128 MB of RAM with--I think--a 333-MHz Pentium II. Both computers do everything I need a computer to do for my life's work of researching and writing on the cognition of Being.

I've been using KDE since 2001 and like its look and feel. But the speed and graphical simplicity of Xubuntu/Xfce are magnetic.

Perhaps another commenter can address your question about running Ubuntu on Intel Mac hardware.
