Because Ubuntu has OpenOffice by default, you can natively open or save to MS Office file types (2003 and below for sure; not sure about 2007). Access is a little different. You have to add a file converter that will then allow you to view/save to Access DBs. I know it's there, but I haven't tested it; you can add either through the 'add/remove' applet (less detail) or the Synaptic package manager (more detail). Both of these have good search functions, too, so all you have to do is type in 'Access' and you're set.

There is a version of Visio called Kivio, and a doppelganger for Project called Project Management or something. I believe these also can read their MS counterparts, and should be able to output to those MS formats. Not positive on the details, though. Check out linuxappfinder.com for more info- a really good resource.
