I've heard of problems with Ubuntu
on virtual machines before as well. What it boils down to is whether the correct Xorg graphics driver is present on the LiveCD.

Now, if you know what you're doing (and admittedly ~99.999% of people don't) you could run in CLI mode and apt-get the correct driver and it will work. But since this is not a reasonable option for most people I'm sure Ubuntu will make this an issue and make sure there is a working driver for their next release.

If I have time tonight I may give it a crack and see if I can figure out what the right driver is.
