I agree that good UI design is much more necessary when working in a smaller space - desktop apps tend to get huge and full of icons and duplicated abilities, simply because there is plenty of room.

My holy grail would be a scalable app that looks as good in mobile form as in desktop form. Some toolkits can do this better than others, but mobile is still generally pretty sparse when it comes to functionality as compared to desktop.
