I'm sure Paul Murphy can help
He advocates SunRays as the thin client de jour. You are right about the SPOF (single point of failure) problem - but the MTBF rate may be insignificantly small. Wireless networks are hard for kids to mess with, as are servers in locked rooms. Every modern UNIX computer has no problem running all school year without needing a reboot. The better the sysadmin, the less downtime a server requires (i.e. programs "locking up" can usually be killed from the OS without a reboot - unlike M$ products). So this kind of system could very well be for you.

Personally I prefer a fat client running UNIX (note: I have discarded the term "Linux" in favor of the more generic term UNIX). In my distributed system, every computer has the EXACT SAME CONFIGURATION - that includes desktops, laptops, and servers. You can log in on any computer and applications are served from a central server (cached locally). Ah the wonders and joys of automount.
