As the name implies, the purpose of a Complete PC backup is to back up your entire PC (or at least a full volume). It isn't intended for recovering individual files. You can, however, restore one or more files if you mount the VHD as a virtual drive using the vhdmount utility from Virtual PC or Virtual Server. Both of those utilities are available as free downloads.
