This isn't new...
It was done at least 20 years ago by Marantz (or whoever owned the tradename at the time) for the "Pianocorder", a reproducing piano that analyzed the piano's sound to determine which key had been struck and how it had been struck.

More recently, a similar appproach was used to analyze the 1955 Gould "Goldberg Variations" so that a modern reproducing piano could recreate the performance in up-to-date digital sound.
