That's what I did and I love it. I went Plex though as it seems a little more mature and is VERY girlfriend friendly.
I think Boxee is the future but it is not as "clean" to operate as Plex yet and the Music organization is very lacking. Music orginization was just important to me as Hulu and Revision 3.
The lack of an "App Store" was the deal breaker for me with XBMC.
I love the fact that the Mini allows you to play DVDs and quickly organize photos with iPhoto. The less electronics the better in a crowded condo.
