It's not illegal
It's violation of the contractual agreement that you didn't sign in the first place. All this means is in court it would quite difficult win this case in full.

It's a license and a license is the preferred method of giving authorization to make a copy under copyright law. All the additional stuff tied to that authorization is fluff that may or may not stand up in court. Many lawyers don't think it would stand up in court. The corporation fear that if it did go court it could be ruled that the copy made when installing an OS may fall into fair use. Currently it doesn't. That's big gamble to take if you want to see if some extra restrictions would be upheld in court case.

So even though it say you can't install the software on non Apple authorized equipment that restriction really means squat unless Apple is prepared to take it to court.
