hybrid approach
The hybrid approach is really the only approach you can afford, not "at least initially", but forever (or until proven stable enough for you).

Most people DO have a hybrid approach, with apps both local and cloud, so when their online apps go down, they have it locally (or an alternative app) and can function. Not just email, we've all had downtime with email, but with other services that are now being pushed as the cloud.

Even if it's only a half-hour per month, even a brief outage, at the wrong time, can really hurt you if your business runs solely in the cloud. It's not about how fast they fix it, it's about how long you're down until they do, and what it costs you.
