Hard drive, multimedia player and photo storage!
Isn't it just a case of Apple offering lots of uses for it's iPod.

Yeah, sure, primarily it's a music player but what's the harm in letting you store anything else you want on it as well. Not to mention iPods (and similiar devices) are about the only portable, battery powered large-scale storage devices.

Personally, I don't have 60 gigs of music - but I do have 60 gigs of data I could store on it!

They also look pretty good as well!
