For my CamPod
I'd be happy with one of those little motorized zoom lenses that
you see on some of those tiny Sony or Canon 3.2MP cameras.
They take really nice consumer-level snapshots and I'd be ok
with that level of quality for the camera -- 3.2MP minimum.
That'll give you a nice 8x10 photo or 5x7 300ppi CMYK print.
Beyond that I'd be happy to spring for a stand alone digital SLR
camera for higher quality work.

I actually think the technology very close for putting the camera
in an iPod and I would just love one! But chances are we're going
to see a PhonePod first. Either way, I'm sure Apple will carefully
reconsider and redesign the iPod UI to adopt the next cool thing
properly.
