Unless you have a HiDef tv, you won't be able to take advantage of the extra horsepower in the 360 or PS3. On a normal tv, the graphical differences put out by all the systems may be minimal. Mario Galaxy in particular is using some very nice shaders and maps.
Don't hate on it until you try it.
