Get the fastest HD
The 7200 HD will be a lot faster than the 5400 and I think the
performance increase will be noticable. It's "only" 100 gigs, bit it's
the same price as the 120 gig 5400. If you need more longer term
storage there is always an external drive - or the spare room on
your iPod.
