the unfortunate truth is that encryption technology that would allow the safe transmission of just about anything is not readily available to the general public. anyone with the desire can pick apart most schemes pretty quickly with a radio reciever and the right software, the real question is who would want to hack a video stream?
As computers advance, I think the day will come where all transmission and data will be encoded, perhaps to varying degrees, but at a much higher level than is now possible. The new multicore processor chips should allow for one processor just for encryption. I guess we'll just have to wait and see.
