Normally the high rollers don't touch their chips other than to bet, casino boss's normally take care of the cashing of the chips for them. The people that would normally take the chips out would be the ones who haven't won big and just have a few chips, take a walk down the strip, then come back and play some more. I see it all the time(I Live in Vegas). I doubt the majority of people who win over the $1000.01(the only reason when you hit a royal flush on max bet quarters, still don't have to pay taxes, only 1000 bucks) that would have to claim taxes after would really carry the chips out. The table games are the only things with chips so I can see the winnings bigger, I still wouldn't want to be walking around out of a casino with chips over that amount on me. Most will either take their big winnings to their rooms, or cash them in before they go to someplace outside the casino. The slot machines pay out in a ticket with a barcode and you turn them in to one of the cashiers cages.
